Meredith Baird has never been one to take the traditional path. After earning degrees in French and Art History she pursued her culinary passions and became a certified raw food chef and instructor. Co-author of three books, Raw Chocolate, Everyday Raw Detox, and Plant Food, she recently released her first solo title - Coconut Kitchen.

Inspired by the versatile and beneficial properties of the coconut, she most recently launched her newest endeavor - a plant-based line of body products called Nucifera Body. With the creation of Nucifera, Meredith hopes to inspire women to feel beautiful with a less is more approach to beauty, and an understanding that what goes on our bodies is just as important as what goes in.

What does living well mean to you?

Having access to the highest quality food, clean water, and plenty of time outside. 

 

What nourishes you? 

Reading nourishes my mind. Bathing nourishes my body, and spending time with my family nourishes my spirit! 

 

What foods/meals support you in feeling your best?

I'm a sauerkraut, avocado, and seaweed junky. Pretty much those three things in some form or combination make me feel pretty good. I also think persimmons are one of the best foods on earth. 

 

How do you simplify?

I try to want less, and use up things that I have first before buying more.

How do you lift yourself up when life gets you down ?

I go for a walk .

 

What are the biggest gifts & deepest challenges of being a parent?

The lack of alone time. Even though I'm lucky that I have some help- I'm also a creative person, and ideas and motivations come to me and different - sometimes inopportune-  times.

I can't say that I underestimated how hard it would be to balance it all, because in some ways it has been easier- but the challenges are maybe different than I expected. I was more worried about the crying and lack of sleep, but that hasn't really been an issue! 

The whole experience is an incredible gift. The love I feel for her is above and beyond anything conceivable.
